S\u1ef1 thay \u0111\u1ed5i c\u1ee7a polyphenol, flavonoid v\u00e0 polysaccharide trong qu\u00e1 tr\u00ecnh l\u00ean men<\/strong><\/h3>\n\n\n\n<p>H\u00e0m l\u01b0\u1ee3ng <strong>polyphenol t\u1ed5ng s\u1ed1<\/strong> trong n\u01b0\u1edbc \u00e9p nh\u00e0u theo c\u00e1c th\u1eddi \u0111i\u1ec3m l\u00ean men kh\u00e1c nhau \u0111\u01b0\u1ee3c tr\u00ecnh b\u00e0y trong H\u00ecnh 1a.<\/p>\n\n\n\n<p>\u1ede n\u01b0\u1edbc \u00e9p t\u01b0\u01a1i (ng\u00e0y 0, F0), h\u00e0m l\u01b0\u1ee3ng polyphenol t\u1ed5ng s\u1ed1 l\u00e0 <strong>168.35 \u00b1 3.54 mg GAE\/100 mL<\/strong>.<\/p>\n\n\n\n<p>Trong su\u1ed1t qu\u00e1 tr\u00ecnh l\u00ean men 63 ng\u00e0y, h\u00e0m l\u01b0\u1ee3ng polyphenol t\u1ed5ng s\u1ed1 <strong>ban \u0111\u1ea7u gi\u1ea3m, sau \u0111\u00f3 t\u0103ng l\u00ean, r\u1ed3i l\u1ea1i gi\u1ea3m ti\u1ebfp<\/strong>.<\/p>\n\n\n\n<p>H\u00e0m l\u01b0\u1ee3ng polyphenol \u0111\u1ea1t m\u1ee9c th\u1ea5p nh\u1ea5t t\u1ea1i th\u1eddi \u0111i\u1ec3m <strong>L56 v\u00e0 F21<\/strong>, l\u1ea7n l\u01b0\u1ee3t l\u00e0:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>125.93 \u00b1 12.02 mg GAE\/100 mL<\/li>\n\n\n\n<li>156.02 \u00b1 6.20 mg GAE\/100 mL<\/li>\n<\/ul>\n\n\n\n<p>H\u00e0m l\u01b0\u1ee3ng polyphenol t\u1ed5ng s\u1ed1 cao nh\u1ea5t \u0111\u1ea1t \u0111\u01b0\u1ee3c t\u1ea1i:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>L28: 199.77 \u00b1 8.12 mg GAE\/100 mL<\/strong><\/li>\n\n\n\n<li><strong>F28: 185.60 \u00b1 5.20 mg GAE\/100 mL<\/strong><\/li>\n<\/ul>\n\n\n\n<p>H\u00e0m l\u01b0\u1ee3ng polyphenol c\u00f3 s\u1ef1 bi\u1ebfn \u0111\u1ed9ng r\u00f5 r\u1ec7t trong c\u1ea3 qu\u00e1 tr\u00ecnh l\u00ean men \u1edf <strong>quy m\u00f4 ph\u00f2ng th\u00ed nghi\u1ec7m v\u00e0 quy m\u00f4 nh\u00e0 m\u00e1y<\/strong>.<\/p>\n\n\n\n<p>Ngo\u00e0i ra, c\u00f3 s\u1ef1 kh\u00e1c bi\u1ec7t \u0111\u00e1ng k\u1ec3 v\u1ec1 h\u00e0m l\u01b0\u1ee3ng polyphenol gi\u1eefa hai quy m\u00f4 l\u00ean men t\u1ea1i c\u00e1c th\u1eddi \u0111i\u1ec3m ng\u00e0y <strong>7, 14, 21, 35, 49, 56 v\u00e0 63<\/strong>.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/www.mdpi.com\/molecules\/molecules-26-02604\/article_deploy\/html\/images\/molecules-26-02604-g001a-550.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p>H\u00ecnh 1. S\u1ef1 thay \u0111\u1ed5i h\u00e0m l\u01b0\u1ee3ng phenol t\u1ed5ng s\u1ed1 (a), flavonoid (b) v\u00e0 polysaccharide (c) trong qu\u00e1 tr\u00ecnh l\u00ean men \u1edf quy m\u00f4 ph\u00f2ng th\u00ed nghi\u1ec7m v\u00e0 quy m\u00f4 nh\u00e0 m\u00e1y. C\u00e1c ch\u1eef c\u00e1i kh\u00e1c nhau tr\u00ean c\u00f9ng m\u1ed9t \u0111\u01b0\u1eddng bi\u1ec3u th\u1ecb s\u1ef1 kh\u00e1c bi\u1ec7t c\u00f3 \u00fd ngh\u0129a th\u1ed1ng k\u00ea \u1edf m\u1ee9c p &lt; 0,05. D\u1ea5u * bi\u1ec3u th\u1ecb s\u1ef1 kh\u00e1c bi\u1ec7t c\u00f3 \u00fd ngh\u0129a gi\u1eefa hai quy m\u00f4 t\u1ea1i c\u00f9ng th\u1eddi \u0111i\u1ec3m l\u00ean men.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Nh\u01b0 th\u1ec3 hi\u1ec7n \u1edf H\u00ecnh 1b, h\u00e0m l\u01b0\u1ee3ng flavonoid c\u00f3 xu h\u01b0\u1edbng t\u0103ng trong su\u1ed1t qu\u00e1 tr\u00ecnh l\u00ean men 63 ng\u00e0y \u1edf c\u1ea3 hai quy m\u00f4 ph\u00f2ng th\u00ed nghi\u1ec7m v\u00e0 nh\u00e0 m\u00e1y.<\/p>\n\n\n\n<p>So v\u1edbi n\u01b0\u1edbc \u00e9p \u0111\u00e3 l\u00ean men, h\u00e0m l\u01b0\u1ee3ng flavonoid c\u1ee7a n\u01b0\u1edbc \u00e9p nh\u00e0u t\u01b0\u01a1i l\u00e0 th\u1ea5p nh\u1ea5t, \u0111\u1ea1t 26.07 \u00b1 0.54 mg RE\/100 mL.<\/p>\n\n\n\n<p>H\u00e0m l\u01b0\u1ee3ng flavonoid \u0111\u1ea1t gi\u00e1 tr\u1ecb cao nh\u1ea5t l\u00e0 36.73 \u00b1 2.51 mg RE\/100 mL v\u00e0o ng\u00e0y th\u1ee9 63 trong qu\u00e1 tr\u00ecnh l\u00ean men \u1edf quy m\u00f4 ph\u00f2ng th\u00ed nghi\u1ec7m.<\/p>\n\n\n\n<p>\u1ede quy m\u00f4 nh\u00e0 m\u00e1y, h\u00e0m l\u01b0\u1ee3ng flavonoid cao nh\u1ea5t l\u00e0 43.28 \u00b1 1.66 mg RE\/100 mL v\u00e0o ng\u00e0y th\u1ee9 49, sau \u0111\u00f3 gi\u1ea3m xu\u1ed1ng.<\/p>\n\n\n\n<p>Trong su\u1ed1t qu\u00e1 tr\u00ecnh l\u00ean men, h\u00e0m l\u01b0\u1ee3ng flavonoid \u1edf quy m\u00f4 nh\u00e0 m\u00e1y th\u01b0\u1eddng cao h\u01a1n so v\u1edbi quy m\u00f4 ph\u00f2ng th\u00ed nghi\u1ec7m.<\/p>\n\n\n\n<p>Sau 35 ng\u00e0y l\u00ean men, c\u00f3 s\u1ef1 kh\u00e1c bi\u1ec7t c\u00f3 \u00fd ngh\u0129a v\u1ec1 h\u00e0m l\u01b0\u1ee3ng flavonoid gi\u1eefa hai quy m\u00f4 l\u00ean men.<\/p>\n\n\n\n<p>Trong qu\u00e1 tr\u00ecnh l\u00ean men n\u01b0\u1edbc \u00e9p, ch\u1ee7ng lo\u1ea1i v\u00e0 s\u1ed1 l\u01b0\u1ee3ng vi sinh v\u1eadt g\u00f3p ph\u1ea7n v\u00e0o ch\u1ea5t l\u01b0\u1ee3ng c\u1ea3m quan v\u00e0 s\u1ef1 chuy\u1ec3n h\u00f3a c\u00e1c th\u00e0nh ph\u1ea7n ho\u1ea1t t\u00ednh sinh
